Ingredients

  • 1 cup Dried Chickpeas
  • 1/4 cup Chickpea Flour
  • 1/2 medium Onion
  • 1/2 cup Fresh Parsley
  • 1/4 cup Fresh Cilantro
  • 3 cloves Garlic
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 cups Vegetable Oil
  • 1/4 cup Tahini
  • 2 tbsp Lemon Juice
  • 1 clove Garlic
  • 2-4 tbsp Water

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Drain and rinse the soaked chickpeas. Place them in a food processor along with chopped onion, parsley, cilantro, minced garlic, cumin, coriander, baking powder, salt, and black pepper.
  2. 2Process until the mixture is finely ground but still slightly coarse. Add chickpea flour and pulse to combine.
  3. 3Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.
  4. 4In a small bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth. Adjust the water to achieve desired consistency.
  5. 5Heat vegetable oil in a deep pot or fryer to 175°C.
  6. 6Form the falafel mixture into small balls or patties.
  7. 7Carefully drop the falafel into the hot oil and fry until golden brown and crispy, about 3-5 minutes per side.
  8. 8Remove the falafel with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. 9Serve the falafel hot with tahini sauce.
