Ingredients

  • 1 cup Teff Flour
  • 1/2 cup Sorghum Flour
  • 2 tablespoons Niter Kibbeh (Ethiopian Spiced Butter)
  • 1 tablespoon Berbere Spice Blend
  • 1/2 teaspoon Salt
  • 2 tablespoons Water

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a medium bowl, combine 1 cup of Teff Flour, 1/2 cup of Sorghum Flour, 1 tablespoon of Berbere Spice Blend, and 1/2 teaspoon of Salt. Stir these dry ingredients together until they are well mixed.
  3. 3Gently melt the 2 tablespoons of Niter Kibbeh. Pour the melted Niter Kibbeh into the bowl with the dry ingredients. Mix everything together thoroughly until it looks crumbly.
  4. 4Gradually add 2 tablespoons of Water to the mixture, stirring as you go. Continue mixing until a cohesive dough forms. If the dough seems too dry, add a tiny bit more water, a teaspoon at a time, until it holds together.
  5. 5Take small portions of the dough and roll them between your hands to form small balls, or shape them into other small, bite-sized pieces.
  6. 6Arrange the shaped dough pieces in a single layer on a baking sheet. Bake in the preheated oven for 30 to 35 minutes. The Dabo Kolo is ready when it is golden brown and feels crunchy.
  7. 7Remove the baking sheet from the oven and let the Dabo Kolo cool completely on the baking sheet before serving. This allows them to become fully crisp.
