Ingredients

  • about 680 g Chicken breasts
  • 3 tbsp Chipotle peppers in adobo sauce
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 28 oz can Crushed tomatoes
  • 1/2 cup Chicken broth
  • 2 tbsp Lime juice
  • 8 count Corn tortillas
  • 1 medium Avocado
  • 1/4 cup Queso fresco
  • 1/4 cup Sour cream
  • 1 cup Shredded lettuce
  • 2 tbsp Olive oil

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place the about 680 g chicken breasts in a medium pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 74°C. Remove the chicken from the pot and let it rest for 5 minutes. Using two forks, shred the chicken into bite-sized pieces.
  2. 2While the chicken is cooking, heat the 2 tbsp olive oil in a 25.4 cm skillet over medium heat. Add the 1 medium onion, chopped into 1.27 cm pieces, and cook for 5-7 minutes, stirring occasionally, until softened and translucent. Add the 3 cloves garlic, minced, and cook for 1 minute more until fragrant.
  3. 3Stir in the 3 tbsp chipotle peppers in adobo sauce, 1 28 oz can crushed tomatoes, 1/2 cup chicken broth, and 2 tbsp lime juice. Bring the mixture to a simmer, then reduce the heat to medium-low and cook for 15 minutes, stirring occasionally, allowing the flavors to meld.
  4. 4Add the shredded chicken to the skillet with the tomato mixture. Stir to combine, then continue to simmer for another 10 minutes, allowing the chicken to absorb the sauce.
  5. 5While the chicken tinga simmers, heat a separate large skillet or griddle over medium-high heat. Place the 8 count corn tortillas on the hot surface, one at a time, and cook for 1-2 minutes per side, until they are lightly browned and crispy. You may need to do this in batches. Set the crispy tostadas aside.
  6. 6Prepare the toppings: slice the 1 medium avocado. Chop the 1/4 cup queso fresco into small pieces. In a small bowl, whisk together the 1/4 cup sour cream and 1 tbsp lime juice (optional, if you have extra lime) to create a crema. Have the 1 cup shredded lettuce ready.
  7. 7Assemble the tostadas by spreading a generous amount of the chicken tinga mixture onto each crispy corn tortilla. Top with slices of the 1 medium avocado, sprinkle with the 1/4 cup queso fresco, drizzle with the sour cream crema, and finish with a handful of the 1 cup shredded lettuce.
