Gluten-Free Chicken Paella

Ingredients

  • 1.5 lbs Chicken Thighs
  • 2 cups Gluten-Free Paella Rice
  • 4 cups Chicken Broth
  • 1 pinch Saffron Threads
  • 1 tbsp Smoked Paprika
  • 3 tbsp Olive Oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 medium Bell Peppers (Red & Yellow)
  • 1 cup Green Beans
  • 4 oz Chorizo (Spanish)
  • 1 medium Lemon
  • 0.5 cup Frozen Peas

Instructions

  1. 1Heat olive oil in a large paella pan or wide skillet over medium-high heat. Brown the chicken thighs on all sides and remove from the pan.
  2. 2Add onion, garlic, and bell peppers to the pan and sauté until softened, about 5 minutes.
  3. 3Stir in smoked paprika and saffron threads, cook for 1 minute more.
  4. 4Add the paella rice and stir to coat with the oil and spices.
  5. 5Pour in the chicken broth and bring to a simmer. Season with salt and pepper.
  6. 6Return the chicken thighs to the pan. Arrange chorizo, green beans, and peas evenly over the rice.
  7. 7Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed. Do not stir during cooking.
  8. 8Remove from heat and let stand for 10 minutes before serving. Garnish with lemon wedges.
