Ingredients

  • 1 cup Gluten-free rolled oats
  • 1 cup Desiccated coconut
  • 3/4 cup Gluten-free all-purpose flour
  • 3/4 cup Sugar
  • 1/2 teaspoon Baking soda
  • 4 oz Butter
  • 2 tablespoons Golden syrup
  • 2 tablespoons Water

Instructions

  1. 1Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. 2In a large bowl, combine gluten-free rolled oats, desiccated coconut, gluten-free flour, and sugar.
  3. 3In a saucepan, melt butter, golden syrup, and water over medium heat. Stir in baking soda (mixture will froth).
  4. 4Pour the wet ingredients into the dry ingredients and mix well.
  5. 5Roll the mixture into small balls and place them on the prepared baking sheets, leaving space between each biscuit.
  6. 6Gently flatten each ball with your fingers.
  7. 7Bake for 10-12 minutes, or until golden brown.
