Ingredients

  • 12 sheets Rice paper wrappers
  • 1 pound Cooked shrimp
  • 4 ounces Rice vermicelli noodles
  • 1 cup Carrots
  • 1 cup Cucumber
  • 1/2 cup Mint leaves
  • 1/2 cup Cilantro leaves
  • 1/2 cup Sunflower seeds
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 1 clove Garlic
  • 2 tablespoons Water
  • 2 tablespoons Hoisin sauce

Instructions

  1. 1Cook the rice vermicelli noodles according to package instructions. Drain and set aside.
  2. 2Prepare the vegetables by julienning the carrots and cucumber.
  3. 3To make the sunflower seed dipping sauce, blend sunflower seeds, soy sauce, rice vinegar, honey, sesame oil, garlic, hoisin and water in a blender until smooth. Add more water if needed to reach desired consistency.
  4. 4Dip each rice paper wrapper in warm water for a few seconds until softened.
  5. 5Lay the wrapper on a flat surface. Arrange shrimp, noodles, carrots, cucumber, mint, and cilantro on the lower third of the wrapper.
  6. 6Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
  7. 7Serve immediately with the sunflower seed dipping sauce.
