  • 8 sheets Rice paper wrappers
  • 1 lb Cooked shrimp
  • 4 oz Rice vermicelli noodles
  • 1/2 cup Fresh mint
  • 1/2 cup Fresh cilantro
  • 8 leaves Lettuce leaves
  • 1/2 cup Carrots, julienned
  • 1/2 cup Cucumber, julienned
  • 3 tablespoons Fish sauce (nuoc mam)
  • 2 tablespoons Lime juice
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sugar
  • 1 clove Garlic, minced
  • 2 tablespoons Hoisin Sauce (Peanut-Free)

Instructions

  1. 1Cook rice vermicelli noodles according to package directions. Drain and set aside.
  2. 2Prepare the dipping sauce: In a small bowl, combine fish sauce, lime juice, rice vinegar, sugar, minced garlic, and peanut-free hoisin sauce. Mix well.
  3. 3Wet a rice paper wrapper in warm water for a few seconds until pliable.
  4. 4Lay the wrapper flat on a clean surface. Place lettuce, vermicelli noodles, shrimp, mint, cilantro, carrots, and cucumber in the center of the wrapper.
  5. 5Fold the sides of the wrapper inward, then roll tightly from the bottom up.
  6. 6Repeat with the remaining ingredients.
  7. 7Serve immediately with the peanut-free dipping sauce.
