Ful Medames (Fava Bean Stew)

A hearty fava bean stew, seasoned with spices and served with pita bread or injera. A popular breakfast in many parts of Africa and the Middle East. This version is nut-free.

Ingredients

  • 2 cups Fava Beans (canned)
  • 1 cup Water
  • 1 medium Tomato (diced)
  • 1/2 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 2 tablespoons Vegetable Oil
  • 4 pieces Pita Bread/Injera
  • 1/2 teaspoon Salt

Instructions

  1. 1Heat vegetable oil in a pot over medium heat.
  2. 2Add chopped onion and sauté until softened, about 5 minutes.
  3. 3Add minced garlic and diced tomato, and cook for another 2 minutes.
  4. 4Stir in fava beans and water. Bring to a boil, then reduce heat and simmer for 35 minutes, or until the stew has thickened to your liking.
  5. 5Stir in lemon juice, cumin, paprika, and salt.
  6. 6Serve hot with pita bread or injera.
