Ingredients

  • 2 cans Canned fava beans
  • 1 can Diced tomatoes
  • 1/4 medium Red onion
  • 1 clove Garlic
  • 1/2 teaspoon Cumin
  • 1 tablespoon Lemon juice
  • 1 tablespoon Vegetable oil
  • Injera (Ethiopian flatbread)

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Open the 2 cans of fava beans and drain them in a colander. Rinse the beans under cool running water until they are no longer slimy, then set them aside.
  2. 2Finely chop the 1/4 medium red onion. Mince the 1 clove of garlic.
  3. 3Place a large, heavy-bottomed pot on the stove and turn the heat to medium. Add the 1 tablespoon of vegetable oil to the pot.
  4. 4Once the oil is shimmering, add the chopped red onion and minced garlic to the pot. Cook, stirring frequently, for 3 to 5 minutes, or until the onion is softened and translucent and the garlic is fragrant. Do not let the garlic brown.
  5. 5Add the drained and rinsed fava beans, the 1 can of diced tomatoes (undrained), and the 1/2 teaspoon of cumin to the pot. Stir everything together.
  6. 6Increase the heat to medium-high and bring the mixture to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for 15 minutes. Stir occasionally to prevent sticking.
  7. 7Remove the pot from the heat. Stir in the 1 tablespoon of lemon juice.
  8. 8Serve the ful medames hot with injera (Ethiopian flatbread).
