Ingredients

  • 3 large Yellow onions
  • 6 cups Beef broth
  • 1/2 cup Dry sherry
  • 2 tablespoons Olive oil
  • 1 tablespoon Tapioca Starch
  • 1 teaspoon Fresh thyme
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slices/crisps Gluten-free bread or Parmesan cheese crisps

Instructions

  1. 1Slice the onions thinly. Heat olive oil in a large pot or Dutch oven over medium heat. Add the onions and cook slowly, stirring occasionally, until they are deeply caramelized, about 30-40 minutes.
  2. 2Stir in tapioca starch and cook for 1 minute.
  3. 3Pour in dry sherry and scrape up any browned bits from the bottom of the pot. Cook for 2-3 minutes.
  4. 4Add beef broth, thyme, and bay leaf. Bring to a simmer and cook for 15 minutes.
  5. 5Season with salt and pepper to taste.
  6. 6Ladle soup into bowls. Top with gluten-free bread or parmesan cheese crisps.
