Ingredients

  • 12 oz Canned tuna (in olive oil)
  • 4 Hard-boiled eggs
  • 1 lb New potatoes
  • 1 lb French green beans
  • 1 pint Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/4 Red onion
  • 1/4 cup Fresh basil
  • 3 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • to taste Salt and pepper

Instructions

  1. 1Boil potatoes until tender, about 15 minutes. Drain and let cool slightly.
  2. 2Blanch green beans in boiling water for 3 minutes. Drain and rinse with cold water.
  3. 3Halve cherry tomatoes and quarter hard-boiled eggs.
  4. 4Slice potatoes into halves or quarters.
  5. 5In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  6. 6Add potatoes, green beans, cherry tomatoes, Kalamata olives, red onion, and tuna to the bowl. Toss gently to combine.
  7. 7Arrange salad on plates and top with hard-boiled eggs and fresh basil.
  8. 8Serve immediately.
