Ingredients

  • 2 tablespoons Olive oil
  • 1 large Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 12 ounces Smoked sausage (chicken or pork)
  • 1 cup Green or brown lentils
  • 6 cups Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf
  • to taste Salt and pepper
  • 1 tablespoon Lemon juice

Instructions

  1. 1Heat olive oil in a large pot or Dutch oven over medium heat.
  2. 2Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. 3Add garlic and cook for 1 minute more.
  4. 4Stir in the smoked sausage and cook for 3-5 minutes, until lightly browned.
  5. 5Add lentils, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until the lentils are tender.
  6. 6Remove the bay leaf. Season with salt and pepper to taste.
