Ingredients

  • 1 lb Potatoes, small, red
  • 1/2 lb Green beans, trimmed
  • 4 large Eggs
  • 12 oz Canned tuna in olive oil, drained
  • 1 can White beans, canned, rinsed and drained
  • 1 pint Tomatoes, cherry
  • 1/2 medium Red onion, thinly sliced
  • 1/4 cup Fresh basil leaves
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Boil potatoes until tender, about 15 minutes. Drain and let cool slightly. Cut into halves or quarters.
  2. 2Boil green beans until tender-crisp, about 5 minutes. Drain and rinse with cold water.
  3. 3Boil eggs for 8 minutes for soft-boiled, or 10 minutes for hard-boiled. Peel and quarter.
  4. 4In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  5. 5Add potatoes, green beans, tuna, white beans, cherry tomatoes, and red onion to the bowl. Toss gently to combine.
  6. 6Arrange the salad on a platter or individual plates.
  7. 7Top with quartered eggs and fresh basil leaves.
  8. 8Serve immediately or chill for later.
