Ingredients

  • 1 1/2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 2 medium Apples, peeled, cored, and diced
  • 3 cups Vegetable oil, for frying
  • to taste Powdered sugar, for dusting

Instructions

  1. 1In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. 2In a separate bowl, combine the applesauce and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  3. 3Gently fold in the diced apples.
  4. 4Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  5. 5Drop spoonfuls of the apple mixture into the hot oil, being careful not to overcrowd the pot.
  6. 6Fry for 2-3 minutes per side, or until golden brown and cooked through.
  7. 7Remove the beignets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  8. 8Dust with powdered sugar and serve warm.
