Fasting Firfir (Injera Scramble)
A vegetarian and vegan Ethiopian dish made from torn injera bread cooked with spices and vegetables. Commonly eaten during fasting periods.
Ingredients
- 8 pieces Injera
- 1 medium Onion
- 2 medium Tomato
- 3 cloves Garlic
- 1 tablespoon Berbere spice blend
- 2 tablespoons Vegetable oil
- 1/4 cup Water
- 1 optional Green chili pepper
Original measure retained: its cup/spoon or fluid-volume standard is unspecified.
Instructions
- 1Tear the 8 pieces of Injera into bite-sized pieces. Finely chop the 1 medium Onion, the 2 medium Tomatoes, and the 3 cloves of Garlic. If using, finely chop the 1 optional Green chili pepper.
- 2Heat the 2 tablespoons of Vegetable oil in a large 30.48 cm skillet over medium heat, which is about 175°C. Add the chopped onion to the skillet and cook, stirring occasionally, until the onion is softened and translucent, about 5 minutes.
- 3Add the chopped garlic, chopped tomato, chopped green chili pepper (if using), and the 1 tablespoon of Berbere spice blend to the skillet. Stir everything together and cook for 5 to 7 minutes, until the tomatoes have softened and started to break down, forming a sauce.
- 4Add the torn injera pieces to the skillet. Stir gently to coat all the injera with the sauce. Cook for 1 minute, stirring to combine.
- 5Pour the 1/4 cup of Water into the skillet. Reduce the heat to low, which is about 120°C. Cover the skillet and cook for 5 to 10 minutes, or until the injera has softened and absorbed most of the sauce. Stir occasionally to prevent sticking.
- 6Serve the Fasting Firfir hot.
