Falafel with Tahini Sauce and Pita Bread

Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 medium Onion
  • 1/2 cup Fresh Parsley
  • 1/4 cup Fresh Cilantro
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Tahini
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic
  • 2 tablespoons Warm Water
  • 4 pieces Pita Bread

Instructions

  1. 1Soak dried chickpeas in water overnight (or for at least 8 hours).
  2. 2Drain and rinse the chickpeas. In a food processor, combine chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and pepper.
  3. 3Process until the mixture is finely ground but still slightly coarse.
  4. 4Shape the mixture into small balls.
  5. 5Heat vegetable oil in a deep skillet or pot over medium-high heat. Carefully drop the falafel balls into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  6. 6Remove the falafel with a slotted spoon and drain on paper towels.
  7. 7Prepare the tahini sauce by whisking together tahini, lemon juice, minced garlic, and warm water in a small bowl. Add more water if needed to reach desired consistency.
  8. 8Serve the falafel with tahini sauce and warm pita bread.
