Falafel with Lemon-Herb Yogurt Sauce

Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 Onion
  • 2 cloves Garlic
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Cilantro
  • 1 tsp Cumin
  • 0.5 tsp Coriander
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 cups Vegetable Oil
  • 1 cup Plain Yogurt
  • 1 tbsp Lemon Juice
  • 1/4 cup Fresh Mint
  • 1 clove Garlic

Instructions

  1. 1Soak dried chickpeas in water for at least 12 hours or overnight.
  2. 2Drain and rinse the chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Process until finely ground but not completely smooth.
  3. 3Form the mixture into small balls or patties.
  4. 4Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  5. 5Fry the falafel until golden brown and crispy, about 3-5 minutes per side.
  6. 6Prepare the yogurt sauce by mixing yogurt, lemon juice, minced mint, and minced garlic.
  7. 7Serve the falafel with the yogurt sauce.
