Ethiopian Popcorn (Fonkua)

Ingredients

  • 1/2 cup Popcorn Kernels
  • 2 tablespoons Vegetable Oil
  • 1 tablespoon Berbere Spice Blend
  • 1/2 teaspoon Salt

Instructions

  1. 1Place a large, heavy-bottomed pot on the stove over medium heat. Add the 2 tablespoons of vegetable oil to the pot and let it heat up for about 1 minute until it shimmers slightly.
  2. 2Add the 1/2 cup of popcorn kernels to the heated oil. Immediately cover the pot with a tight-fitting lid.
  3. 3Cook the kernels over medium heat, listening carefully. Shake the pot gently every 20-30 seconds to ensure the kernels don't stick to the bottom and burn. Continue cooking until the popping sound slows to about one pop every 2-3 seconds.
  4. 4Once the popping has significantly slowed, carefully remove the pot from the heat. Let the pot sit on the counter for 1 minute to allow any remaining kernels to pop.
  5. 5Pour the popped popcorn into a large serving bowl.
  6. 6Sprinkle the 1 tablespoon of berbere spice blend and the 1/2 teaspoon of salt evenly over the popcorn.
  7. 7Toss the popcorn gently with your hands or a large spoon until all the pieces are coated with the spice and salt mixture.
