Ethiopian Ful Medames (Stewed Fava Beans)

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 medium Tomato
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1Soak fava beans in water overnight.
  2. 2Drain and rinse fava beans. Place them in a pot with fresh water and bring to a boil. Reduce heat and simmer for 1-1.5 hours, or until beans are tender.
  3. 3While beans are cooking, sauté diced onion and garlic in olive oil until softened.
  4. 4Add diced tomato, cumin, paprika, salt, and pepper. Cook for 5 minutes.
  5. 5Add the cooked bean mixture and simmer for another 15 minutes.
  6. 6Stir in lemon juice. Serve hot with gluten free bread or injera.
