Ingredients

  • 1 cup Red Lentils
  • 1 medium Carrot
  • 1 medium Onion
  • 1 medium Potato
  • 2 cloves Garlic
  • 6 cups Vegetable Broth
  • 1 tsp Cumin
  • 1/2 tsp Turmeric
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Rinse the red lentils.
  2. 2Dice the carrot, onion, and potato into small pieces. Mince the garlic.
  3. 3In a large pot, heat olive oil over medium heat.
  4. 4Add the diced vegetables and garlic and sauté for 5 minutes, until softened.
  5. 5Add the rinsed lentils, vegetable broth, cumin, turmeric, salt, and pepper to the pot.
  6. 6Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are soft and the vegetables are tender.
  7. 7Use an immersion blender to blend the soup until smooth.
  8. 8Stir in lemon juice before serving.
