  • 4 large Bell Peppers
  • 1.5 lbs Ground Beef
  • 2 cups Cauliflower Rice
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 cup Tomato Sauce
  • 0.25 cup Fresh Parsley
  • 1 tsp Cumin
  • 0.5 tsp Cinnamon
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut bell peppers in half lengthwise and remove seeds and membranes.
  3. 3Heat olive oil in a large skillet over medium heat.
  4. 4Add chopped onion and garlic and sauté until softened.
  5. 5Add ground beef and cook, breaking it up with a spoon, until browned.
  6. 6Stir in cauliflower rice, tomato sauce, parsley, cumin, cinnamon, salt, and pepper.
  7. 7Mix well and simmer for 5 minutes.
  8. 8Stuff each bell pepper half with the ground beef mixture.
  9. 9Place stuffed peppers in a baking dish and bake for 35-40 minutes, or until peppers are tender.
