Ingredients

  • 1 cup Dried Fava Beans
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 1/4 cup Parsley
  • 1/4 cup Cilantro
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Vegetable Oil
  • 4 pieces Pita Bread
  • 1/4 cup Tahini
  • 1 medium Tomato
  • 1/2 medium Cucumber

Instructions

  1. 1Soak the fava beans in water for at least 24 hours, changing the water a few times.
  2. 2Drain the fava beans and combine them in a food processor with onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper.
  3. 3Process until a coarse mixture forms.
  4. 4Shape the mixture into small patties.
  5. 5Heat vegetable oil in a deep skillet over medium heat.
  6. 6Fry the falafel patties until golden brown and crispy, about 3-4 minutes per side.
  7. 7Warm the pita bread.
  8. 8Prepare tahini sauce by mixing tahini with lemon juice and water to desired consistency.
  9. 9Slice tomatoes and cucumbers
  10. 10Assemble the sandwiches by filling each pita with falafel patties, tahini sauce, tomato and cucumber.
  11. 11Serve immediately.
