Ingredients

  • 3 lbs Chicken drumsticks
  • 4 medium Red onions
  • 4 tbsp Berbere spice blend
  • 1/2 cup Niter Kibbeh (Dairy-Free)
  • 6 cloves Garlic
  • 2 inch Ginger
  • 6 large Hard-boiled eggs
  • 2 cups Chicken broth
  • 2 tbsp Tomato paste
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. 1Finely chop the red onions and sauté in the dairy-free niter kibbeh until softened and deeply caramelized.
  2. 2Add the berbere spice blend, minced garlic, and ginger. Cook for 2-3 minutes until fragrant.
  3. 3Add the chicken drumsticks and tomato paste, coating them well with the spice mixture.
  4. 4Pour in the chicken broth, bring to a boil, then reduce heat and simmer for 1.5 hours, or until the chicken is very tender.
  5. 5Add the hard-boiled eggs during the last 30 minutes of cooking to warm through.
  6. 6Season with salt and pepper to taste. Serve hot with injera.
