Ingredients

  • 0.5 cup Semolina (Cream of Wheat)
  • 2 cups Coconut Milk (canned, full-fat)
  • 3 tablespoons Sugar
  • 0.5 teaspoon Vanilla Extract
  • 1 cup Fresh Berries

Instructions

  1. 1In a large, heavy-bottomed pot, combine the 2 cups of full-fat coconut milk and 3 tablespoons of sugar. Place the pot over medium heat (325°F / 163°C) and bring the mixture to a gentle simmer, stirring occasionally until the sugar dissolves.
  2. 2While whisking constantly to prevent lumps, slowly pour in the 0.5 cup of semolina into the simmering coconut milk mixture. Continue to whisk vigorously for about 1 minute until the semolina is fully incorporated and no lumps remain.
  3. 3Reduce the heat to low (200°F / 93°C). Cook the pudding, stirring constantly with a wooden spoon or heatproof spatula, for 10 to 15 minutes. The pudding is ready when it has thickened to a creamy, porridge-like consistency, coating the back of your spoon.
  4. 4Remove the pot from the heat. Stir in the 0.5 teaspoon of vanilla extract until evenly distributed throughout the pudding.
  5. 5Divide the thickened pudding evenly among four serving bowls.
  6. 6Top each bowl of pudding with 0.25 cup of fresh berries.
  7. 7Serve the dairy-free semolina pudding warm or chilled.
