Ingredients

  • 1 cup Buckwheat flour
  • 1.5 cups Plant-based milk (e.g., almond, soy)
  • 1 large Egg
  • 1/4 teaspoon Salt
  • 1 tablespoon Olive oil (for cooking crepes)
  • 1 pound Mushrooms (sliced)
  • 1/2 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Fresh thyme (chopped)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1In a medium bowl, whisk together the 1 cup of buckwheat flour, 1.5 cups of plant-based milk, 1 large egg, and 1/4 teaspoon of salt until the batter is completely smooth and there are no lumps.
  2. 2Heat a 10-inch non-stick frying pan or griddle over medium heat, about 350°F (175°C). Add 1 tablespoon of olive oil to the pan, swirling to coat the bottom.
  3. 3Pour 1/4 cup of the buckwheat batter onto the hot, oiled pan for each crepe. Cook for 2 to 3 minutes on the first side, until the edges look set and the bottom is golden brown. Carefully flip the crepe and cook for another 2 to 3 minutes on the second side, until golden brown.
  4. 4Transfer the cooked crepes to a plate and repeat step 3 with the remaining batter, adding a little more olive oil to the pan if needed, until you have 4 crepes. Set the cooked crepes aside.
  5. 5In a large skillet, heat 1 tablespoon of olive oil over medium heat, about 350°F (175°C). Add the 1 pound of sliced mushrooms and cook, stirring occasionally, for 8 to 10 minutes, or until they have softened and started to brown.
  6. 6Add the 1/2 medium diced onion and 2 cloves minced garlic to the skillet with the mushrooms. Cook for about 5 minutes, stirring often, until the onion is softened and translucent.
  7. 7Stir in the 1 tablespoon of chopped fresh thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper into the mushroom mixture. Cook for 1 more minute, stirring constantly, until fragrant.
  8. 8Spoon the mushroom filling onto one half of each of the 4 crepes. Fold the crepes in half, then in half again to form a triangle, or roll them up.
  9. 9Serve the filled crepes warm.
