Dairy-Free Patatas Bravas Hash

A breakfast twist on classic Patatas Bravas, using dairy-free alternatives for a rich and spicy flavor. Great with a fried egg substitute.

Ingredients

  • 1.5 lbs Potatoes
  • 3 tbsp Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tsp Smoked Paprika
  • 1/4 tsp Cayenne Pepper
  • 2 tbsp Tomato Paste
  • 1/2 cup Vegetable Broth
  • 1/4 cup Dairy-Free Mayo
  • 1 tsp Lemon Juice
  • to taste Salt and Pepper

Instructions

  1. 1Dice the potatoes into 1/2-inch cubes.
  2. 2Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  3. 3Add the potatoes and cook until golden brown and crispy, about 15-20 minutes. Season with salt and pepper.
  4. 4While the potatoes are cooking, prepare the bravas sauce.
  5. 5In a separate small saucepan, heat the remaining 1 tablespoon of olive oil over medium heat.
  6. 6Add the diced onion and cook until softened, about 5 minutes.
  7. 7Add minced garlic, smoked paprika, and cayenne pepper. Cook for 1 minute more.
  8. 8Stir in the tomato paste and vegetable broth. Bring to a simmer and cook until the sauce has thickened slightly, about 5 minutes.
  9. 9Remove from heat and stir in the dairy-free mayo and lemon juice.
  10. 10Pour the bravas sauce over the crispy potatoes and toss to coat. Serve immediately.
