  • 1/2 cup Sugar
  • 1 cup Water
  • 1/4 cup Cornstarch
  • 1 pint Dairy-Free Ice Cream (Vanilla or Matcha)

Instructions

  1. 1Prepare the mochi: In a microwave-safe bowl, whisk together glutinous rice flour, sugar, and water until smooth.
  2. 2Cover the bowl with plastic wrap and microwave for 2 minutes. Stir well and microwave for another 1-2 minutes, until the dough is translucent and sticky.
  3. 3Dust a clean surface with cornstarch. Turn the mochi dough out onto the surface and dust the top with more cornstarch. Let it cool slightly.
