Ingredients

  • 1.5 cups Green Lentils
  • 6 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 4 cloves Garlic
  • 2 tbsp Olive Oil
  • 2 tsp Smoked Paprika
  • 1 tsp Dried Thyme
  • 1 leaf Bay Leaf
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp Lemon Juice

Instructions

  1. 1Rinse the lentils.
  2. 2Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery and cook until softened, about 5 minutes.
  3. 3Add minced garlic and cook for 1 minute more.
  4. 4Stir in smoked paprika and dried thyme.
  5. 5Add lentils, vegetable broth, diced tomatoes, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
