  • 1 tsp Dried thyme
  • 1/2 tsp Dried rosemary
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Preheat your oven to 190°C. Peel the about 910 g sweet potatoes and cut them into 2.54 cm cubes. Place the cubed sweet potatoes in a large pot and cover them with cold water. Bring the water to a boil over high heat.
  2. 2While the sweet potatoes are boiling, combine the 1 cup green or brown lentils with the 4 cups vegetable broth in a separate medium saucepan. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 20 minutes, or until the lentils are tender and have absorbed most of the liquid. Drain any excess liquid from the lentils and set them aside.
  3. 3Continue boiling the sweet potatoes for 15-20 minutes, or until they are very tender when pierced with a fork. Carefully drain all the water from the sweet potatoes. Return the hot sweet potatoes to the pot and mash them thoroughly with a potato masher or fork, incorporating the 1/2 cup dairy-free milk, 1/2 tsp salt, and 1/4 tsp black pepper until smooth. Set the mashed sweet potatoes aside.
  4. 4Heat the 2 tbsp olive oil in a large (25.4-30.48 cm) skillet over medium heat. Add the 1 medium onion (diced into 1.27 cm pieces), 1 cup carrots (diced into 1.27 cm pieces), and 1 cup celery (diced into 1.27 cm pieces). Sauté for 8-10 minutes, stirring occasionally, until the vegetables are softened and the onion is translucent.
  5. 5Add the 3 cloves garlic (minced) and 2 tbsp tomato paste to the skillet with the softened vegetables. Cook for 1 minute, stirring constantly, until the mixture is fragrant. Stir in the cooked 1 cup green or brown lentils, 1 tsp dried thyme, 1/2 tsp dried rosemary, 1/2 tsp salt, and 1/4 tsp black pepper. Mix everything well to combine the lentil mixture.
  6. 6Transfer the entire lentil mixture evenly into an 20.32 × 20.32 cm or 22.86 × 33.02 cm baking dish. Carefully spread the mashed sweet potatoes evenly over the lentil mixture, ensuring it forms a complete topping. Bake for 25-30 minutes, or until the sweet potato topping is lightly browned around the edges and the filling is bubbling.
  7. 7Remove the baking dish from the oven. Let the Dairy-Free Lentil Shepherd's Pie cool for 10-15 minutes before serving. This cooling time allows the filling to set, making it easier to scoop and serve.
