Ingredients

  • 1 cup Glutinous Rice Flour
  • 4 cups Coconut Milk
  • 1 cup Brown Sugar
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1In a large, heavy-bottomed pot, whisk together the glutinous rice flour and 1 cup of coconut milk until smooth. Ensure there are no lumps.
  2. 2Add the remaining coconut milk and brown sugar to the pot. Stir well to combine.
  3. 3Cook over medium-low heat, stirring CONSTANTLY to prevent sticking and burning. This process will take about 45-60 minutes.
  4. 4As the mixture cooks, it will gradually thicken and darken in color. Continue stirring until it reaches a smooth, glossy, and very thick consistency. It should pull away from the sides of the pot.
  5. 5Stir in the vanilla extract during the last few minutes of cooking.
  6. 6Pour the kalamay into a greased baking dish or individual serving cups.
  7. 7Let it cool completely to room temperature, then refrigerate for at least 2 hours to set.
