Instructions

  1. 1Preheat your oven to 375°F (190°C). Place the 2 lb chicken breasts in a large heavy-bottomed pot (e.g., 6-quart or larger) and cover them with water by at least 1 inch. Bring the water to a rolling boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the internal temperature of the chicken breasts reaches 165°F (74°C) and they are no longer pink in the center.
  2. 2Carefully remove the cooked 2 lb chicken breasts from the pot and place them on a cutting board. Let them rest for 5 minutes to allow the juices to redistribute.
