Dairy-Free Champorado (Chocolate Rice Porridge)

Ingredients

  • 1 cup Sweet Rice (Glutinous Rice)
  • 4 cups Water
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 can Coconut Milk
  • 1/2 cup Sugar (or sweetener of choice)
  • 1/4 cup Dairy-Free Chocolate Chips (optional)

Instructions

  1. 1In a pot, combine sweet rice and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until rice is soft and the mixture has thickened.
  2. 2Stir in cocoa powder and sugar (or sweetener). Cook for another 5 minutes, stirring constantly, until well combined.
  3. 3Stir in coconut milk. Simmer for another 2-3 minutes.
  4. 4Serve hot, topped with dairy-free chocolate chips (optional).
