Dairy-Free Anzac Biscuits

Ingredients

  • 1 cup Rolled oats
  • 1 cup Desiccated coconut
  • 3/4 cup All-purpose flour
  • 3/4 cup Sugar
  • 125 g Dairy-free butter
  • 2 tbsp Golden syrup
  • 1 tsp Baking soda
  • 2 tbsp Boiling water

Instructions

  1. 1Preheat oven to 160°C (320°F).
  2. 2In a large bowl, combine rolled oats, desiccated coconut, flour, and sugar.
  3. 3In a small saucepan, melt dairy-free butter and golden syrup over low heat.
  4. 4In a separate small bowl, dissolve baking soda in boiling water.
  5. 5Add the baking soda mixture to the melted butter and golden syrup. It will foam up.
  6. 6Pour the wet ingredients into the dry ingredients and mix well.
  7. 7Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  8. 8Flatten the balls slightly with a fork.
  9. 9Bake for 12-15 minutes, or until golden brown.
  10. 10Let the biscuits cool on the baking sheet before transferring them to a wire rack.
