Ingredients

  • 1 medium head Cauliflower
  • 2 medium Potatoes
  • 1 medium Onion
  • 1 medium Tomatoes
  • 1 tbsp Ginger-garlic paste
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 1 tsp Salt
  • 2 tbsp Coconut oil

Instructions

  1. 1Grate or pulse cauliflower into cauliflower rice.
  2. 2Heat coconut oil in a pot. Add diced onion and sauté until golden brown.
  3. 3Add ginger-garlic paste and sauté for a minute.
  4. 4Add chopped tomatoes and cook until softened.
  5. 5Add cubed potatoes and cauliflower florets. Sauté for 5-7 minutes.
  6. 6Add turmeric powder, cumin powder, coriander powder, garam masala, and salt. Mix well.
  7. 7Add 1/2 cup of water and simmer for 20-25 minutes, or until the potatoes and cauliflower are tender.
  8. 8Serve hot with cauliflower rice.
