Ingredients

  • 2 cups All-purpose flour
  • 0.75 cup Water
  • 2 tbsp Vegetable oil
  • 2 tsp Berbere spice blend
  • 1 tsp Nigella seeds
  • 0.5 tsp Salt

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Preheat your oven to 175°C.
  2. 2In a large bowl, combine the 2 cups of all-purpose flour, 0.5 teaspoon of salt, 2 teaspoons of berbere spice blend, and 1 teaspoon of nigella seeds. Whisk them together to distribute evenly.
  3. 3Pour in the 0.75 cup of water and the 2 tablespoons of vegetable oil. Mix with your hands or a spoon until a shaggy dough begins to form.
  4. 4Turn the dough out onto a clean surface and knead for about 5 minutes. Continue kneading until the dough is smooth and elastic.
  5. 5Lightly dust your work surface with a small amount of flour from the 2 cups of all-purpose flour. Roll out the dough very thinly, aiming for a thickness of about 0.3175 cm.
  6. 6Using a knife or a pizza cutter, cut the rolled-out dough into small, bite-sized pieces, approximately 1.27 cm by 1.27 cm.
  7. 7Arrange the small dough pieces in a single layer on a baking sheet. Ensure they are not overlapping.
  8. 8Bake for 30-35 minutes, or until the pieces are golden brown and feel crisp to the touch. They should smell fragrant.
  9. 9Remove the baking sheet from the oven and let the dabo kolo cool completely on the baking sheet before serving. This will help them achieve maximum crispness.
