Dabo Kolo (Ethiopian Roasted Barley Snack) with Coconut

Ingredients

  • 2 cups Barley
  • 2 tbsp Coconut Oil
  • 1/4 cup Coconut Flakes
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/4 tsp Salt

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2Rinse the barley and drain well.
  3. 3In a bowl, toss barley with coconut oil, cumin, coriander, and salt.
  4. 4Spread the barley in a single layer on a baking sheet.
  5. 5Roast for 25-30 minutes, or until golden brown and crunchy, stirring halfway through.
  6. 6Stir in coconut flakes during the last 5 minutes of baking.
  7. 7Let cool completely before serving.
