  • 0.25 cup Tapioca starch
  • 1 large Egg
  • 1 cup Water
  • 0.25 teaspoon Salt
  • 2 tablespoons Butter
  • 4 slices Ham
  • 0.5 cup Gruyere cheese
  • 2 large Egg

Instructions

  1. 1In a bowl, whisk together buckwheat flour, tapioca starch, egg, water, and salt until smooth.
  2. 2Heat a lightly oiled griddle or frying pan over medium heat.
  3. 3Pour about 1/4 cup of batter onto the hot surface, swirling to form a thin circle.
  4. 4Cook for 2-3 minutes per side, or until golden brown.
  5. 5Melt a little butter in the pan. Place a crêpe in the pan. Add two slices of ham and 1/4 cup of gruyere cheese. Crack one egg into the center of the crêpe.
