Ingredients

  • 2 cups Cooked Coconut Rice
  • 0.5 cup All-Purpose Flour
  • 0.5 teaspoon Baking Powder
  • 0.25 teaspoon Salt
  • 0.25 cup Water
  • 1 medium Mango
  • 0.25 medium Red Onion
  • 0.25 cup Cilantro
  • 1 tablespoon Lime Juice
  • 0.5 cup Vegetable Oil

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a medium bowl, combine the 2 cups of cooked coconut rice, 0.5 cup of all-purpose flour, 0.5 teaspoon of baking powder, and 0.25 teaspoon of salt. Add the 0.25 cup of water and mix everything together until you have a thick batter.
  2. 2Prepare the mango salsa: Dice the 1 medium mango into 1.27 cm cubes. Finely chop the 0.25 cup of cilantro. Dice the 0.25 medium red onion into very small pieces, about 0.635 cm dice.
  3. 3In a separate medium bowl, combine the diced mango, diced red onion, chopped cilantro, and 1 tablespoon of lime juice. Stir gently to mix.
  4. 4Heat the 0.5 cup of vegetable oil in a large skillet over medium heat until it reaches 175°C.
  5. 5Carefully drop rounded tablespoons of the rice batter into the hot oil. Fry for 3-4 minutes per side, until the fritters are golden brown and crispy. You should hear a gentle sizzle as they cook.
  6. 6Using a slotted spoon, remove the cooked fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  7. 7Serve the hot rice fritters immediately with the prepared mango salsa on the side.
