Coconut Curry Chickpea Bites

Ingredients

  • 1 can Chickpeas, canned, drained and rinsed
  • 1/2 cup Shredded Coconut, unsweetened
  • 1/4 cup Breadcrumbs
  • 1 tsp Curry Powder
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1 tbsp Olive Oil

Instructions

  1. 1Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. 2In a food processor, combine the 1 can chickpeas (drained and rinsed), the 1/2 cup shredded coconut, the 1/4 cup breadcrumbs, the 1 tsp curry powder, the 1/2 tsp garlic powder, and the 1/4 tsp salt.
  3. 3Pulse the mixture in the food processor until it is coarsely ground but still has some texture. Do not over-process into a paste.
  4. 4Scoop out portions of the chickpea mixture and roll them into small, bite-sized balls or flatten them into small patties.
  5. 5Place the formed chickpea bites onto the baking sheet that you prepared earlier.
  6. 6Drizzle the 1 tbsp olive oil evenly over the chickpea bites on the baking sheet.
  7. 7Bake for 15-20 minutes, or until the bites are golden brown and feel crispy to the touch.
  8. 8Serve the Coconut Curry Chickpea Bites warm.
