Ingredients

  • 3 lb Whole chicken
  • 4 slices Ginger, sliced
  • 4 stalks Scallions, bruised
  • 2 cups Long-grain rice
  • 4 cups Chicken broth
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 cucumber Cucumber, sliced

Instructions

  1. 1Place chicken in a large pot with ginger and scallions. Cover with water and bring to a boil. Reduce heat and simmer for 30-40 minutes, or until chicken is cooked through.
  2. 2Remove chicken from pot and set aside to cool. Reserve the chicken broth.
  3. 3In the same pot, add rice, chicken broth, and garlic. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is cooked through.
  4. 4While rice is cooking, debone chicken and slice into pieces.
  5. 5Serve rice with sliced chicken, sliced cucumber, and dipping sauce (soy sauce and sesame oil).
