Ingredients

  • 4 medium Ripe bananas
  • 1/2 cup Tapioca flour
  • 1/4 cup Rice flour
  • 2 tablespoons Sugar
  • 1/4 teaspoon Salt
  • 1/2 cup Water
  • 2 cups Vegetable oil, for frying

Instructions

  1. 1Peel the 4 medium ripe bananas. Cut each banana in half or into 1-inch thick slices.
  2. 2In a medium bowl, whisk together the 1/2 cup tapioca flour, 1/4 cup rice flour, 2 tablespoons sugar, and 1/4 teaspoon salt until combined.
  3. 3Gradually add the 1/2 cup water to the dry ingredients, mixing until you have a smooth batter with no lumps.
  4. 4Pour the 2 cups of vegetable oil into a large, heavy-bottomed pot or deep frying pan. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  5. 5Dip each banana piece into the smooth batter, making sure each piece is fully coated. Let any excess batter drip off briefly.
  6. 6Carefully place the battered banana pieces into the hot oil, being careful not to overcrowd the pot. Fry for 2 to 3 minutes, turning occasionally, until the bananas are golden brown and crispy. They should sound like they are sizzling actively.
  7. 7Using a slotted spoon, remove the fried bananas from the hot oil. Place them on a plate lined with paper towels to drain any extra oil.
