Chuối Chiên (Fried Bananas)

Ingredients

  • 4 medium Ripe bananas
  • 1/2 cup Rice flour
  • 1/4 cup Tapioca starch
  • 2 tbsp Sugar
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Coconut milk
  • 1 tbsp Sesame seeds
  • 2 cups Vegetable oil

Instructions

  1. 1In a medium bowl, combine the 1/2 cup rice flour, 1/4 cup tapioca starch, 2 tbsp sugar, 1/2 tsp baking powder, and 1/4 tsp salt. Whisk these dry ingredients together until they are evenly mixed.
  2. 2Gradually pour in the 1/2 cup coconut milk while whisking continuously. Continue to mix until you have a smooth batter with no lumps.
  3. 3Peel the 4 medium ripe bananas. Cut each banana in half lengthwise.
  4. 4Dip each banana half into the batter, turning to make sure it is completely covered on all sides.
  5. 5Pour the 2 cups of vegetable oil into a large, heavy-bottomed saucepan. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  6. 6Carefully place the battered banana halves into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until the batter is golden brown and crispy. You will hear a gentle sizzling sound as they fry.
  7. 7Using a slotted spoon, remove the fried bananas from the oil. Place them on a plate lined with paper towels to drain any excess oil.
  8. 8Transfer the drained fried bananas to a serving platter. Sprinkle the 1 tbsp sesame seeds over the top just before serving.
