Ingredients

  • about 680 g Chicken breasts
  • 1/4 cup Olive oil
  • 2 tablespoons Lemon juice
  • 2 teaspoons Dried oregano
  • 3 cloves Garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 8 each Wooden skewers
  • 1 cup Plain Greek yogurt
  • 1/2 medium Cucumber
  • 2 tablespoons Fresh dill

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Cut the about 680 g of chicken breasts into 2.54 cm cubes. You will need 8 wooden skewers for this recipe.
  2. 2In a medium bowl, whisk together the 1/4 cup of olive oil, 2 tablespoons of lemon juice, 2 teaspoons of dried oregano, 3 cloves of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Add the chicken cubes to this marinade and toss until all pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
  3. 3While the chicken is marinating, prepare the tzatziki sauce. Grate the 1/2 medium cucumber. Place the grated cucumber in a clean kitchen towel or paper towels and squeeze out as much excess liquid as possible.
  4. 4In a separate medium bowl, combine the 1 cup of plain Greek yogurt, the squeezed grated cucumber, 2 tablespoons of fresh dill, and a pinch of salt. Mix these ingredients together until well combined. Cover the bowl and refrigerate the tzatziki sauce until you are ready to serve.
  5. 5Preheat your grill to medium-high heat. This is approximately 204.4-232.2°C (200-230°C).
  6. 6Remove the marinated chicken from the refrigerator. Thread the chicken cubes evenly onto the 8 wooden skewers.
  7. 7Place the chicken skewers on the preheated grill. Grill for 6-8 minutes per side. The chicken is cooked through when it is no longer pink inside and reaches an internal temperature of 74°C.
  8. 8Remove the cooked chicken souvlaki skewers from the grill. Let them rest for 2-3 minutes before serving. Serve the chicken souvlaki skewers with the chilled tzatziki sauce.
