Ingredients

  • 2 cups Cooked chicken breast, shredded
  • 1 cup Red grapes, halved
  • 1/2 cup Walnuts, chopped
  • 1/2 cup Celery, diced
  • 1/4 cup Red onion, diced
  • 1/2 cup Mayonnaise (ensure soy-free)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 servings Gluten-free bread or lettuce cups

Instructions

  1. 1In a large bowl, combine the 2 cups of cooked chicken breast, shredded, the 1 cup of red grapes, halved, the 1/2 cup of walnuts, chopped, the 1/2 cup of celery, diced, and the 1/4 cup of red onion, diced.
  2. 2In a separate small bowl, whisk together the 1/2 cup of soy-free mayonnaise, the 1 tablespoon of Dijon mustard, and the 1 tablespoon of lemon juice until smooth.
  3. 3Pour the dressing mixture over the chicken and vegetable mixture in the large bowl. Toss everything gently until all ingredients are evenly coated with the dressing.
  4. 4Add the 1/4 teaspoon of salt and the 1/4 teaspoon of black pepper to the bowl. Toss again to distribute the seasonings evenly.
  5. 5Serve the chicken salad on 4 servings of gluten-free bread or in lettuce cups.
