Ingredients

  • about 680 g Chicken Thighs
  • 1/4 cup Calamansi Juice
  • 2 tablespoons Achiote Oil
  • 2 tablespoons Ginger
  • 4 cloves Garlic
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Soy Sauce
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Cut the about 680 g Chicken Thighs into bite-sized pieces, about 2.54 cm cubes.
  2. 2In a large bowl, combine the 1/4 cup Calamansi Juice, 2 tablespoons Achiote Oil, 2 tablespoons Ginger, 4 cloves Garlic, 1 tablespoon Brown Sugar, 1 tablespoon Soy Sauce, 1/2 teaspoon Salt, and 1/4 teaspoon Black Pepper. Stir well to combine.
  3. 3Add the cut chicken thighs to the bowl with the marinade. Toss to ensure all pieces are evenly coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  4. 4Preheat your grill to medium heat, aiming for a temperature between about 175°C and about 205°C (175°C to 200°C).
  5. 5Thread the marinated chicken pieces onto skewers, leaving a small space between each piece to ensure even cooking. Discard any leftover marinade.
  6. 6Place the skewers on the preheated grill. Grill for 10-15 minutes, turning them every few minutes, until the chicken is cooked through and has developed a slightly charred exterior. The internal temperature of the chicken should reach 74°C.
  7. 7Remove the skewers from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute, keeping the chicken moist.
