Ingredients

  • about 910 g Chicken thighs
  • 2 tbsp Achiote powder
  • 2 tbsp Ginger
  • 4 cloves Garlic
  • 2 stalks Lemongrass
  • 1/4 cup Calamansi juice
  • 2 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 4 cups Cooked rice

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a large bowl, combine the 2 tbsp achiote powder, 2 tbsp ginger, 4 cloves garlic, 2 stalks lemongrass, 1/4 cup calamansi juice, 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tsp salt, and 1/2 tsp black pepper. Stir everything together until it forms a thick marinade.
  2. 2Add the about 910 g chicken thighs to the bowl with the marinade. Use your hands or a spoon to toss the chicken pieces until they are completely coated. Cover the bowl and place it in the refrigerator to marinate for at least 1 hour, or for up to overnight.
  3. 3Thread the marinated chicken pieces evenly onto skewers. You should have enough chicken for several skewers.
  4. 4Preheat your grill or a grill pan over medium-high heat. For a grill, aim for a temperature of 204.4°C (200°C). For a grill pan, heat it until it is hot to the touch.
  5. 5Place the chicken skewers on the preheated grill or grill pan. Cook for 10 to 12 minutes, turning the skewers every few minutes, until the chicken is cooked through and has some nice charred marks. The internal temperature of the chicken should reach 74°C.
  6. 6Remove the chicken skewers from the grill or grill pan. Let them rest for 2-3 minutes before serving. This helps keep the chicken juicy.
  7. 7Serve the Chicken Inasal skewers hot over the 4 cups of cooked rice.
