Ingredients

  • 2 lbs Chicken thighs
  • 1/2 cup Coconut aminos
  • 1/4 cup Apple cider vinegar
  • 6 cloves Garlic
  • 1 tbsp Black peppercorns
  • 2 leaves Bay leaves
  • 1 cup Water
  • 2 tbsp Coconut oil
  • 4 cups Cooked rice

Instructions

  1. 1In a large bowl, combine chicken thighs with coconut aminos, vinegar, garlic, peppercorns, and bay leaves. Marinate for at least 30 minutes.
  2. 2Heat coconut oil in a large pot or Dutch oven over medium heat.
  3. 3Add the marinated chicken and sear on all sides until browned.
  4. 4Pour in the water, bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the chicken is tender and the sauce has thickened.
  5. 5Serve hot over cooked rice.
