Ingredients

  • 2 cups Cooked Chicken Adobo (shredded)
  • 4 cups Cooked Rice (day-old)
  • 6 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce (gluten-free)
  • 1 tablespoon White Vinegar
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Cooking Oil (vegetable or canola)
  • 4 large Eggs (optional, fried)
  • 2 tablespoons Scallions (chopped, for garnish)

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place a 30.48 cm skillet or wok over medium-high heat. Add the 2 tablespoons of cooking oil and heat until it shimmers, about 175°C.
  2. 2Add the 6 cloves of minced garlic to the hot oil. Cook, stirring constantly, until the garlic is golden brown and fragrant, about 1 to 2 minutes. Be careful not to burn it.
  3. 3Add the 4 cups of cooked rice to the skillet. Use a spatula to break up any clumps and stir-fry until the rice is heated through and starting to get slightly crispy, about 3 to 5 minutes.
  4. 4Add the 2 cups of cooked chicken adobo, 2 tablespoons of gluten-free soy sauce, 1 tablespoon of white vinegar, and 1/2 teaspoon of black pepper to the skillet. Stir everything together until well combined.
  5. 5Continue to stir-fry the mixture for another 3 to 5 minutes, stirring frequently, until all the ingredients are thoroughly heated and the flavors have blended.
  6. 6Serve the chicken adobo fried rice hot. If desired, top each serving with a fried egg and sprinkle with the 2 tablespoons of chopped scallions.
