Ingredients

  • 2 cups Certified Gluten-Free Rolled Oats
  • 1.5 cups Gluten-Free All-Purpose Flour Blend
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 0.5 tsp Salt
  • 0.75 cup Vegan Butter
  • 0.75 cup Brown Sugar
  • 0.5 cup Granulated Sugar
  • 0.5 cup Unsweetened Applesauce
  • 1 tsp Vanilla Extract
  • 1 cup Raisins

Instructions

  1. 1Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. 2In a medium bowl, whisk together the gluten-free flour blend, baking soda, cinnamon, and salt.
  3. 3In a large bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until light and fluffy.
  4. 4Beat in the unsweetened applesauce and vanilla extract until well combined.
  5. 5Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. 6Stir in the certified gluten-free rolled oats and raisins.
  7. 7Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. 8Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
  9. 9Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
