Chechebsa (Cracked Flatbread)

Ingredients

  • 4 pieces Kitcha (Ethiopian unleavened flatbread)
  • 3 tbsp Ethiopian spiced clarified butter (Niter Kibbeh)
  • 2 tbsp Honey
  • 1 tsp Berbere spice blend

Instructions

  1. 1Tear the 4 pieces of Kitcha (Ethiopian unleavened flatbread) into small, bite-sized pieces.
  2. 2Place a 12-inch skillet over medium heat, which is 350°F (175°C).
  3. 3Add the 3 tbsp of Ethiopian spiced clarified butter (Niter Kibbeh) to the hot skillet. Let it melt and shimmer for about 30 seconds.
  4. 4Carefully add the torn Kitcha pieces to the skillet. Pan-fry the Kitcha for 8 to 10 minutes, stirring frequently, until the pieces are lightly browned and feel crispy to the touch.
  5. 5Drizzle the 2 tbsp of Honey evenly over the Kitcha in the skillet.
  6. 6Sprinkle the 1 tsp of Berbere spice blend over the honeyed Kitcha.
  7. 7Stir everything together gently for 1 minute to ensure the honey and spice coat all the Kitcha pieces.
  8. 8Serve the Chechebsa immediately.
